Chardonnay and Pinot Noir are, in our mind, indissociable — two sides of the same coin. Where one grows, the other is never too far. Chardonnay displays its most delicate, pure and complex expression in the same marginal climate where its red brethren thrives. The varietal is an incredibly uncompromising and truthful vector for terroir, which is why we source fruit from only those vineyards that display the strongest character.
To preserve the purity of site, we immediately weigh, crush and press the grapes when they arrive, with the resulting juice transferred with all its sediments to 228L and 500L Burgundian barrels. Alcoholic and malolactic fermentations are carried by indigenous yeasts and bacteria. The wine rests for one year and then is transferred sur lie to a stainless tank for six more months of aging before it is bottled.
